A typical variety of Oriental rice, grown in Italy. Its grains are long and thin. The parboiling process involves pressure steaming of the rough rice. This makes minerals and vitamins spread inside the grain. Much used in catering as it never overcooks. Recommended as a side dish for meat, fish and vegetables.
